Fluffy brioche: the secret to making it so soft and fragrant

INGREDIENTS:

380g (3 cups) all-purpose flour; 

20g (3 tbsp) cornstarch; 

40g (3 tbsp) butter; 

50g (⅝ cup) sugar; 

1 egg; 

7g (1 tsp) salt; 

7g (1 ½ tsp) dry yeast; 

150ml (⅔ cup) warm milk; 

40ml (3 tbsp) vegetable oil; 

Melted butter, sesame seeds.

METHOD:

Whisk flour with cornstarch, salt, and yeast.

Add melted butter. milk, oil, egg, and sugar into the flour mixture. Knead until smooth dough forms.

Set the dough aside for 1 hour.

Cut the dough into pieces and roll them into balls. Flatten each ball into a disk and cover half of them in melted butter and sesame seeds.

Layer dough disks on overlapping and set aside for 1 hour to proof.

Brush with egg wash and bake at 180°C/350°F for 25 minutes.
