Ingredients:
- 1 can chickpeas
- 2 cups spinach
- 1 onion, chopped
- 2 garlic cloves
- 1 tbsp curry powder
- 1 tsp cumin
- 1 cup coconut milk
- 1 tbsp oil
Method:
- Sauté onion and garlic in oil.
- Add spices and cook for 2 minutes.
- Add chickpeas and coconut milk. Simmer for 10 minutes.
- Add spinach and cook until wilted.
- Serve with rice or naan.
